The Caspian is where the world's best caviar has always come from. But “Iranian” on a tin rarely means Iranian inside it. Ours is grown, harvested and packed in Iran, and nowhere else — the real thing, brought to your table rather than kept for a few.

Acipenser baerii — Iran
Homā Baerii Caviar
Clean and crisp, gently briny, with a fresh pop that doesn't need a thing alongside it. This is the caviar you don't save for an occasion: good on a boiled egg, a crisp, a spoon, the back of your hand on an ordinary Tuesday.
Serving suggestionWonderful on its own, and happy to play: blinis and creme fraiche, a boiled egg, or beside a char siu bao.

Huso huso — Iran
Homā Beluga Caviar
Large, silken pearls that melt to butter and toasted hazelnut, with a long, slow finish that has a way of stopping conversation for a second. This is the tin built for sharing: generous enough to pass around, good enough that you'll want to.
Serving suggestionBest on its own, straight from the tin, on a mother-of-pearl or bone spoon, never metal. Let the pearls warm a moment before they burst.

Huso huso, born without colour
Homā Almas Caviar
Pale gold pearls from albino Beluga, the rare sturgeon born without colour. Only a handful of tins come through in a year, sometimes fewer. The taste is Beluga's butter and toasted hazelnut, then something softer underneath we've never quite pinned a word to.

However you like it best
There's no correct way to eat caviar. But since people always ask, here's how we tend to.
The Bump
A small spoonful on the back of the hand, straight up, no accompaniment. The warmth of your skin lifts the aroma, and there's nothing between you and the caviar. It's the purest way to taste it, and somehow both the most casual and the most knowing thing you can do with a tin. If you only try one thing, try this.
On its own
On a mother-of-pearl or bone spoon, never metal, since metal turns the flavour. Let the pearls sit a moment and come up to temperature before they burst. A caviar this good doesn't need a single thing alongside it.
At the table
When you want to make a spread of it: blinis and crème fraîche, a soft-boiled egg, sashimi, or a spoonful over congee. High and low, side by side. That's the whole point.
Past that, there are no rules worth keeping. Open a tin, gather the people you like most, and go find the way you love it.
